Hi, I’m Liv - owner of “noi Matcha Bar & Coffee House”. We first initiated our store as an idea in October 2025, progressing into experimenting with content on our social media and quickly receiving requests to showcase our products in real life. In late October, we sold our first pouch of matcha powder. In November we completed our first bulk order. And in December, we were able to run two successful pop-ups in Chelmsford with our first “specials” menu giving us valuable insight into which items were bestsellers, and which could be cut.
Every two months, we aim to work with different humanitarian organisations in affected countries across the globe. We revolve our menu around the seasonal and geographical ingredients attributed to these countries: working with small farms to provide ethically-sourced, fair trade ingredients. Then, with each pop-up or event that we do, we are able to donate a portion of our proceeds to the charity we are working with. We have full transparency with our customers, where at the end of our time working with the charity, we post a quick video breakdown of our earnings and proof of our donation. Previously, we have worked with Filastin Aid, Medical Aid for Palestine and womenforwomen.org.

In January 2026, we took a step back to refocus and curate our new menu. Throughout January & February, we will be working with The Thai Red Cross as our donation site. The TRC Disaster Fund provides immediate aid to people affected by natural disasters and displacement, due to ongoing Thai-Cambodian conflicts. These funds go towards essential supplies like food, water, and medical kits, as well as disaster preparedness, and rehabilitation.
For Context:
The Cambodian-Thai border crisis is a century-old territorial issue - which escalated into direct armed confrontation in 2025: resulting in the displacement of over 140,000 Thai civilians.
Flooding, cyclones and earthquakes across Thailand affected over 3.6 million people in 2025.
With Thailand frequently being noted as one of the countries most affected by natural disasters, it is vital that we at “noi” are able to help donate what we can to assist those who are displaced, facing poverty and a highly increased risk of medical issues.
This charity also holds a special place in our hearts with our namesake, my mother-in-law, “Noi” being Thai - and my husband Joe, who you’ll see serving (or potentially filming videos), grew up in Thailand. Our contributions to this charity fulfill Jit-a-sa (doing good without the expectation of getting something in return), and help to break these cycles of poverty - specifically supporting children’s welfare and providing these crucial resources to those who are the most in need.
Another key part of our work this month with The TRC are our new menu additions.
For January and February, we have five new specials on offer:
Our specialty number one is our Thai Milk Tea - with nowhere else in Chelmsford offering the same authentic taste. This tea is rich, sweet and aromatic, with milk, our Thai Tea Concentrate and condensed milk.
Our Thai Iced Coffee uses Nana Thai Specialty Coffee Beans (dark roast with notes of chocolate and peanut), with some condensed milk - offering a sweet, deep and creamy flavour.
This month we have also prepared our own house-made syrup - working with small farms to make Nam Dok Mai (mango) and Ma Praw On (young coconuts) to make a sweet delicious addition to our drinks.
There are three new drinks available with our mango-coconut syrup: Mango & Coconut Matcha Latte (matcha, over milk and ice, on top of our house-made syrup), Coconut Mango Cloud (Matcha or Espresso over Thai Chaokoh coconut water and ice, with our house-made syrup), OR our Mango & Coconut Lemonade (a low-caffeine lemonade with our syrup).

As noted on our site, making drinks is our profession - but our passion is doing what we can to work with vulnerable and marginalised communities. These newest menu additions are our way of celebrating “Noi”‘s very own Thai culture an community - bringing new flavours to our customers, +6300 miles away from where our recipes were first born!

With each pop-up, each cup and each conversation - we are able to donate more towards emergency relief, long-term rehabilitation, and essential resources for those who need them most.
